Crepes
Ingredients:
1 cup GF flour mIx1/4 cup Sugar
1/8 teaspoon Salt
1/4 teaspoon Xanthan gum
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/4 teaspoon Clove
1/4 teaspoon Allspice
1/8 teaspoon Ginger
1 ¾ cups Milk
3 eggs
andspices together in a blender. Blend on low just until ingredients are blended. Sift flour and Xanthan gum
together, then slowly add flour mixture while turned on. Set aside and let rest at least 20
minutes.
To Cook: pour a small layer of batter enough to just cover the bottom of the pan wait until cooked through, (should be no more than 3 min
per crepe, usually 1-2 min).
Filling
1 can pumpkin puree
1 8oz. pkg. Neufchatel Cheese
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/8 teaspoon Clove
pinch Allspice
pinch Ginger
1/4 cup maple syrup
1/2 cup honey
Mix all ingredients together and whip until blended together and smooth.
Fill cooked crepes or top, or both, whatever you want!!!! :-)
