Random Facebook Creations Pt. 1

Those of you who are my friends on facebook have seen me posting pictures of my different pantry/fridge raid meals on my wall. So I decided to take a look at those and put up some of the recipes for you in the next two weeks. Granted I don't know how exact these are since when I cook it is almost never with a recipe. Today...

the Kale Concoction!
Ingredients:
16 oz. Kale
12 oz. Frozen Peas
12 oz. Frozen Corn
10 Sweet Potatoes
5 TJ's Garlic Chicken Sausage (thickly sliced)
1 cup Red Wine
1/4 cup Red Wine Vinegar
1/2 cup Olive Oil
3 cloves Fresh Garlic (minced)
Salt and Peper to taste
(amounts will vary based on servings needed)

Julienne the sweet potatoes and season with salt and pepper. Heat 3 Tbsp. of the olive oil in a large skillet. Fry sweet potatoes in skillet for 1 minute then add minced garlic to skillet and continue to cook for 2 minutes until sweet potatoes are warm but not totally cooked through. Remove from skillet and set aside. Fry TJ's Garlic Chicken Sausage on medium heat in remaining oil until sausage is browned on both sides, then remove from pan. Pour Red Wine into pan and and scrap bottom to add the flavors, add Kale and steam in wine. When Kale is cooked down remove from pan and reduce wine on low heat for about 5 minutes.

In another pan put a tiny amount of water in pan cook peas and corn for 3 minutes (just until soft and no longer frozen). Drain peas and corn set in large bowl and combine with remaining olive oil and red wine vinegar then season with salt and pepper. Gently stir and let peas and corn soak in the flavors for a few minutes, this will act as a sort of relish. Add kale and sausage back to pan with reducing wine just to warm them back up.

When plating food put Kale on bottom then add sausage, place sweet potatoes in middle then top with peas and corn relish. Finally spoon piping hot red wine sauce over top. If desired, season with salt, pepper, and finishing oil.
